Executive Chef
Dave McDonald
Dave McDonald joined Finger Lakes Casino & Racetrack as a Kitchen Supervisor in 2006, and was promoted to Executive Chef in 2011. Prior to Finger Lakes, Dave worked at prominent restaurants in the Rochester Area such as Benucci’s and Lift Bridge Café.
Dave’s favorite thing about Finger Lakes is that there is always something exciting and new happening; it is never boring. In his free time, Dave likes to read and cook for his family and friends.

Executive Sous Chef
Brian Pape
Brian Pape joined Finger Lakes Casino & Racetrack as a Sous Chef in 2010 and was promoted to Executive Sous Chef in 2011. Prior to coming to Finger Lakes, Brian attended the Culinary Institute of New Orleans where he worked at Emeril’s Delmonico during his tutelage.
After graduation, Brian worked at various country clubs along the East Coast before coming to Finger Lakes. He also went to Canada to train for the opening of Finger Lakes’ own Tim Hortons. Brian’s favorite thing about Finger Lakes is working somewhere that is constantly growing and adding new venues. His favorite meals to prepare are smoked food or barbecue.
Outside of Finger Lakes, Brian is an avid outdoorsman and enjoys hunting and fishing.
